Generation after generation has carried it forward, and today it is in the skilled hands of Jacob Dam – the youngest generation of the family dynasty.

A classic is born in 1924

Rewinding to the years after World War I, change was everywhere. A German journeyman arrived at the bakery in Aakirkeby – not only ready to work, but also carrying in his pocket the recipe for a unique rye biscuit.

Master baker Dam, with the family’s flair for curiosity, tested the recipe. It allowed him to make clever use of the residual heat from the great ovens after the rye bread was baked. The biscuit quickly won the hearts of customers – and today, a century later, Bornholmerkiks is still baked and enjoyed.

Sales at home and abroad

Johannes Dam & Søn has been growing steadily, and Bornholmerkiks has made its way onto shelves all across Bornholm, throughout Denmark – and even beyond the country’s borders. Jacob Dam keeps a sharp eye on the market and seizes every opportunity that arises.
